Three Generations, One Tiramisu

From Nonna’s kitchen to yours, this is our family tiramisu recipe:

Ingredients:

6 Eggs

1kg Mascarpone

1-2 Packets of Savoiardi Biscuits

12 Tablespoons of Castor Sugar

500ml Fresh Coffee

1x Shot of Coffee Liqueur (Your choice, may I recommend Tia Maria or Baileys Original)

1 x Chocolate of choice (Lindt Milk) to shave on top + Cacao Powder


Recipe:

  1. Turn the Cafetera on

  2. While the coffee is brewing, separate the egg yolks and egg whites into two large bowls

  3. Beat the egg whites with half of the sugar (6 tbsp) until stiff peaks form, the texture should resemble meringue

  4. Beat the egg yolks with the remaining sugar (6 tbsp) until pale, creamy and fluffy

  5. Add 500g of mascarpone to the yolk mixture and fold through. Add the remaining 500g and mix until smooth

  6. Gently fold the beaten egg whites into the cream mixture until fully incorporated. You should now have one bowl of light, airy cream

  7. Pour the coffee into a shallow bowl, add a few ice cubes and a shot of your coffee liqueur of choice

  8. Spread a layer of cream mixture on the base of your dish

  9. Lightly dip the savoiardi biscuits into the coffee mixture (1-2 seconds per side) They should remain slightly firm, as they will soften overnight

  10. Arrange the dipped savoiardi over the cream to form the first layer

  11. Continue layering cream and biscuits until your hearts content

  12. (Optional) On one layer, shave chocolate over the cream

  13. Refrigerate overnight for best results

  14. When ready to serve, dust generously with cocoa powder

  15. Serve it cold, share it generously, and linger a little longer at the table
